Homemade Crock Pot Swedish Meatball Recipe

It’s the end of fall. Day light savings is hitting us all extra hard this year. It seems like every night there is record wind storms. It’s always raining and dreary. You need comfort food. But not just anything. After all, this is the first crockpot meal of the SZN. You need to set the tone. This year you are stepping up your game.

Well sis- you stumbled on the right Pinterest post. This is the stuff you will be craving for months. You will make these delicious little meat miracles several times this season. The first time will obviously be the best (as it always is), but you will keep chasing that delicious balance of creamy, fatty enjoyment all winter long. I literally studied Swedish Meatball recipes for 3 days straight before I made this little number. And believe me- I took the best of every recipe and made these perfect little morsels.

Without further adieu- Homemade, from scratch Swedish Meatball Recipe for the Crock Pot!!

Ingredients for Swedish Meatballs

  • 1 pound ground pork
  • 1 pound ground beef (I like 80/20 because the higher fat concentration makes the meatballs extra juicy)
  • 1 small white onion- diced
  • 1/2 cup of half and half
  • 5 tablespoons panko breadcrumbs
  • 1 egg
  • 1 teaspoon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon butter

Ingredients for Sauce

  • 2.5 cups beef broth
  • 1 cup of half and half
  • 3 tablespoons corn starch
  • 2 tablespoons worchester sauce
  • 2 cloves of garlic finely minced
  • 2 teaspoons fresh parsley finely chopped (you can use dried also but only use 1 teaspoon)
  • 1 teaspoon salt
  • 1/4 teaspoon dried thyme
  • 1/2 teaspoon pepper
  • 1 pinch nutmeg

Cooking Directions:

1-Combine the half and half and breadcrumbs in a large bowl. (The breadcrumbs will absorb the cream and solidify)

2- Melt butter in cast iron skillet over low-medium heat. Sauté white onion until translucent and fragrant. Remove from heat and allow to cool.

3- To the bowl with the breadcrumbs add the pork, beef, egg, mustard, salt, pepper and the cooled onion.

4- Mix with your hands making sure everything is uniform and incorporated.

5-With wet hands, form the meatballs. They should be slightly larger than golf balls.

6- Coat your cast iron skillet with canola oil. Warm to medium-high heat. Cook the meatballs until they are brown on all sides. (they don’t have to be fully cooked through-they will finish in the crockpot)

7- Remove the cooked meatballs from the skillet and add to your crock pot.

8- Make the sauce by added all ingredients to a large bowl and whisking well. Make sure the corn starch is fully incorporated into the sauce.

9- Pour the sauce over the meatballs in the crockpot. Cover and cook on low for at least 4 hours. The fat from the meatballs will drip into the sauce and create a delicious gravy.

10- Make sure the meatballs are cooked thoroughly (165 degrees F) , Serve over homemade mashed potatoes or egg noodles. Enjoy!
